Seafood jollof rice

Ingredients
1 cup white rice
4 cups water
1 cup mixed and diced bell peppers
2 spoons olive oil
1 diced onion
1 teaspoon minced garlic
1 can chopped tomatoes
1 vegetable stock cube
3 teaspoons seafood rub seasoning
1 spoon Harrisa spice
750 g frozen seafood mix (defrosted)
Salmon flavored cream cheese
Salt and pepper to taste
Method
Cook the rice 'til al dente. Set aside.
In a separate pan and over high heat sauté the onions in oil with garlic and the seafood rub till soft.
Reduce to medium heat and add the bell peppers followed by the canned tomatoes. Stirring continuously.
Add the vegetable stock, Harrisa spice, seafood mix and simmer for 15 minutes.
Add the cooked rice to the pot and cook further for 4 minutes till rice and vegetables are warm. Lastly add a few spoons of cream cheese to the rice and season to taste with salt & pepper.
