Roast butternut with green goddess dressing

My most favourite way to cook veggies is roasting them. It imparts such different depth of flavour that I can never get enough of. In the recipe I'll be sharing below, I use a home made Cajun spice blend and a green goddess dressing - which are by far the star ingredients in the dish.


This butternut is one of those side dishes that go along with anything. I like to serve it alongside some poultry or seafood.

Serves 4

Prep and cooking time: 50 minutes


Ingredients

2 small butternut squash, deseeded and cut into wedges

A splash of olive oil (for drizzling over the veg)

Eats by Nada Cajun seasoning

Eats by Nada Green goddess dressing (for drizzling over the veg)

A squeeze of golden syrup (optional)

A handful of sunflower seeds and parsley (for garnish)


Method

1. Preheat your oven to 180°

2. Place the butternut in a large bowl, season with the Cajun spice and drizzle over some olive oil. Make sure the butternut is liberally coated.

3. Move the butternut to a baking tray and roast in a single layer for about 30 minutes or until tender.

4. When cooked, top the butternut with the green goddess dressing. Garnish with sunflower seeds and sprigs of parsley.
