Coconut cream maize meal porridge

We're nearing Africa Day and I thought to share a much loved dish from my childhood and one that most South Africans grew up eating. Of course I put my own spin on this nostalgic dish by way of adding a unique coconut twist. Do try this at home! Ingredients 1 cup of mielie meal 1 can of coconut cream 3 cups of water Pinch of salt Honey to taste Dried fruit and/or nuts


Method 1. Bring water to the boil. 2. Add salt and mielie meal. 3. Pour coconut cream over the mixture and mix with a whisk to avoid lumps 4. Turn heat to medium and cook with lid half on for about 30 minutes, stirring occasionally. 5. Serve and enjoy with a splash of honey and your favorite dried fruit/nuts
