Coconut braised chicken

Ingredients 5 - 6 chicken pieces 3 - 4 minced garlic cloves 2 teaspoons smoked paprika 1 teaspoon Harrisa seasoning 1 teaspoon chicken seasoning 1 curry beef stock cube 1 diced onion 400ml double cream coconut yoghurt Salt and pepper to taste



Method 1. In a large bowl mix together the yoghurt, paprika, Harrisa seasoning, crumbled stock cube, salt and pepper. 2. Generously rub chicken with the yoghurt mixture until well coated and leave in the fridge to marinate for at least one hour (you can do this overnight as well) 3. Preheat oven to 180°. Layer a cast iron pan/baking dish with onion and garlic. Take the chicken out of the fridge and layer on top of the onion and garlic. 4. Braise chicken for an hour. Just before the meat completely cooks, take the pan/dish out of the oven and sprinkle with chicken seasoning. Put back into the oven and bake til golden. 5. Serve with a steamed veggie medley and/or rice.
