Amasi marinated chicken burger with a sweet soy slaw

Ingredients For the burger 6 chicken breast fillets 6 lightly toasted and halved burger buns A small packet of salad leaves (I used baby lettuce and rocket) 3 tablespoons mayonnaise 1 tablespoon Sriracha hot sauce 2 cups of crushed cornflakes Salt and pepper to taste Amasi marinade 2 cups amasi 1 tablespoon smoked paprika 2 tablespoons Portuguese chicken seasoning 1/2 tablespoon onion powder For the slaw Small chopped red cabbage 1 julienned Granny Smith apple 3 tablespoons sweet Indonesian soy sauce
Method 1. Make a slaw by mixing the cabbage, the julienned apple and soy sauce together. Set aside and refrigerate. 2. Lay each chicken breast on a flat surface and bash with a clingfilm covered meat tenderiser 'til the fillets are about 2cm thick. 3. In a separate bowl mix amasi with smoked paprika, Portuguese chicken seasoning, onion powder, salt and pepper. 4. Add chicken to the amasi marinade, cover and chill for about 2 hours. 5. Put the crushed cornflakes in a large flat plate. 6. Remove the chicken pieces from the marinade and dredge in the cornflakes, shaking off any excess. 7. Fill a frying pan with vegetable oil. Fry the chicken in the oil, in batches, for 4-5 minutes turning half way, until deep golden brown. 8. Drain chicken on paper towels and set aside. 9. Now we're almost ready to assemble the burger. Mix the mayo and Sriracha together. Spread a dollop of the sauce across one bun half. 10. Pile up the sandwich with rinsed salad leaves, slaw, and chicken. 11. Enjoy with the side of your choice
