So this is one of those recipes that came about by "accident", you know those dishes that come out when you just throw things together 😊 I'm happy to say my family loved it. Husbae literally said it was in the top 3 of meals I've ever cooked haha...

Ingredients
Ribs
1 rack of defrosted pork ribs
Harissa rub
Tomato paste
Sweet chilli sauce
Honey
Minced garlic
Brown sugar
Smoked salt
Water
Rice
Madras curry powder
Mixed bell peppers
Mushrooms
Onion
Cheese and chives flavored cream cheese
Roast Veggie Medley
Cauliflower
Vine tomatoes
Sweet Potato
Vegetable seasoning
Truffle flavored olive oil
Method
1. Fill pan with 1 and 1/2 cups of water. Add ribs, a spoon of minced garlic and a pinch of salt to the water. Pre-cook ribs on stovetop, not until they are completely cooked but just until the meat pulls back from the bone.
2. In a separate dish mix a few teaspoons of harissa rub, a spoon of sugar, tomato paste and sweet chilli sauce together. Smother generously on the rib rack and place on baking pan.
3. Chop veggies and season with olive oil and veggie seasoning. Place veg in the baking pan together with the ribs
4.Cook ribs and veggies for about 45 minutes at 180°C.
5. While the meat and veggies are cooking, cook rice on the stove top.
6. Chop one onion, half a green pepper, half a yellow pepper, half a red pepper, mushrooms and saute 'til cooked.
7. Added the cooked rice to the sauteed veggies, season with curry powder and mix in cream cheese into the rice.
8. Serve ribs with the roast veg medley and rice.
9. Enjoy!
